Cocoa beans are the seeds of the cacao tree, which are used in the manufacture of chocolate. They are extracted from berries, which is opened at harvest and are put to dry.
The pod contains 16-60 seeds. Cocoa beans are clustered in the center of the pod into a mass consisting of five rows corresponding to five lodges of the egg. They vary in shape and are about 25 mm long, 15 mm wide and 8 mm thick. they are surrounded by a sticky white pulp called mucilage it is sweet, tangy and made โโof 80% water, 15% glucose and 5% pectin
The kernel of the cocoa bean, is formed by a large embryo with two cotyledons folded on themselves. It is variable in color, ranging from white to dark purple depending on the variety. It is wrapped in a coat of pink or pale red.
Cocoa beans contain about 50% fat called cocoa butter, 5% water, 7% starch, 4% cellulose, 2% theobromine, 20% protein and 6% other minerals
